Marlborough, New Zealand, is famed for its vibrant, zesty whites, but winemaking duo Will and Rachel Hoare saw untapped potential. Inspired by Burgundy, they focus on individual sites to craft wines that express a true sense of place. Their elegant Chardonnay comes from a small plot of 40-year-old vines on an ancient alluvial riverbed. Refined and masterful, it is characterised by citrus, white peach, minerality, and subtle biscuit notes from a few months in French oak. A must-try for lovers of Burgundian whites.

Will's wine career began with a rebellious streak - selling wine to classmates! Since then, he's worked at Cloudy Bay, Au Bon Climat, and Fromm, gaining expertise in single-vineyard wines. Rachel fell for Chardonnay while working with Burgundy legends. Together, they founded Novum to craft precise, small-batch wines, focusing on "sweet spots" within vineyards. Their Burgundian-style wines are truly exceptional.

"The grapes were hand-harvested, then whole-bunch pressed. We then focused on capturing the purity of the fruit, with minimal intervention, wild fermentation and 13 months of barrel ageing. We have created a delicious Burgundian style Chardonnay that has elegantly balanced the exceptional fruit character with the luxurious texture from oak ageing." - Will and Rachel Hoare, Winemakers.
