Casa Aguila showcases the practice of maturation. Being held in oak barrels, the wine can slowly breathe, taking on subtle notes from the barrel and developing its fruit character from primary to tertiary and complex. On the palate it delights with its full-bodied structure, elegant tannins and a long, lingering finish.

The Winemaker

Alvaro Campos
Winemaker:

Alvaro Campos

Álvaro Campos is the new winemaker at Bodegas Paniza, bringing a fresh perspective and innovative ideas and a solid track record in Spanish wine production. Despite his youth, he has garnered significant experience, working in various wine regions around his hometown in Valencia, including DO Valencia, DO Alicante, DO Utiel-Requena, and DO Manchuela. His versatility and expertise have seen him excel in both small, family-run wineries and larger operations, culminating in his current role at Bodegas Paniza. Here, he leverages his deep knowledge of grape varieties like Garnacha, Syrah, and Viura. Mentored by esteemed winemakers like Pedro Cárcel, Álvaro embodies the new wave of Spanish winemaking talent that has already made a significant mark on the industry.

"With Casa Aguila, time is one of our most important ingredients. Patient ageing in oak allows the fruit to evolve, the tannins to soften and subtle layers of spice and savoury complexity to develop, creating a wine with real depth and balance." - Álvaro Campos, Winemaker.
