The team at Forrest have been working tirelessly to make lower ABV wines by following more traditional processes in the vineyards and winery, not looking to technology to do the work for them. The biggest problem was getting the balance between the sugar and acid right, especially the sugar. Through meticulous vineyard work and strict temperature control through fermentations they've achieved what they set out to do - make naturally lower ABV wines that are wonderfully balanced and deliver top-notch drinking.
"We're always looking to add to our already impressive range of varieties and we decided 5 years ago to plant a little plot of Albariño. After months of research, we decided to plant in our warmest site at the southern end of the valley. The results have been a pleasant surprise and we see this variety as an important part of the future." - Beth Forrest, Winemaker.
