Jacob Wilson is one of the youngest Master Distillers in the UK and he has been consulting and helping others get their distilleries off the ground for years. He is finally realising a dream and has just opened his very own distillery (with a little help from Mum, Dad and Sis) near his hometown of Henley-on-Thames in a fabulous old barn. Always true to his hands on approach this expression includes hand peeled orange peel, the finest fresh ginger and perfect pink peppercorn.
The Distillery The Distillery
Located in a beautiful old threshing barn on the outskirts of Henley-on-Thames, Oxfordshire, The Henley Distillery is a family run, traditional style, craft distillery. They use 300l Copper Alembic Stills, which allow them full, hands on, control over the distillation process. The Henley Distillery is also one of only a handful of distilleries in the UK that is owned and run by a Master Distiller.
The Perfect Serve The Perfect Serve
Keep it simple and let the gin do the chatting. Drop a large ice cube into a gin bowl or large wine glass and add 50ml of pink gin. Top-up with 70ml of low-fat tonic (our preference here) and garnish with a twist of orange or pink grapefruit peel. A gin and tonic that is superbly refreshing and utterly compelling.
