Winemaking technology in central Spain has come on a huge amount in recent years, which is allowing winemakers to realise the full potential of well-grown, healthy grapes to create extremely clean and refreshing white wines. This is a region with vast vineyard landscapes, so they're not short of a grape or two and the prices are very favourable. The Mosaicos is beautifully uncomplicated, ideally served cold as an aperitif in the garden sunshine or while prepping your dinner for the evening ahead.
