Pinot Noir is one of the key pillars of the Bollinger style and the family-owned maison has built its reputation by showcasing this variety across all its Champagnes. However, the PN cuvée is different to Bollinger’s other wines as it focuses solely on this grape variety. It is the result of research into the distinct styles of Pinot Noir across different vineyards within the Champagne region. It is therefore a continuation of Bollinger’s heritage, while also being a wine that reinvents itself year after year. In this way, each new edition of the PN cuvée offers a unique interpretation of the maison’s vineyards and expertise. PN AYC18 is named after the base wine for this blend - a parcel of 2018 Pinot Noir from Aÿ, which is one of the rare 17 villages to be classified as Grand Cru in the Champagne region. It maintains Bollinger’s signature rich and open style with wonderfully smoky, nutty and caramel tones, imparted by barrel ageing. The reserve wines from magnums dating back to 2009 add exceptional aromatic intensity. Feel free to pop the cork at celebrations small and large, or if you’re looking to serve this at dinner, we’d highly recommend pairing it with scallops or even duck à l’orange.

Denis Bunner
Originally from Alsace, Denis Bunner has always had a passion for Champagne and joined Maison Bollinger as Assistant Cellar Master in 2013. Today, after taking over the cellar from his friend and mentor Gilles Descôtes, he is the chief winemaker. Denis is tasked with the mission to maintain the outstanding quality of Maison Bollinger while driving innovation. He says that one of his most memorable moments was being able to taste a magnum of Bollinger Vintage 1905, and when he’s not living and breathing Champagne, you can find him on his mountain bike enjoying the outdoors.
"PN AYC18 is an assembly of 100% Pinot Noir, predominantly from the Aÿ cru. It is blended with other villages on the Montage de Reims, such as Tauxières and Verzenay. The base year is 2018. Older wines also feature from our reserve magnums, the oldest of which dates back to 2009. Its ageing period in the cellar is twice as long as required by appellation regulations and its dosage is moderate at 6 grams per litre. We recommend you serve PN AYC18 between 10 and 11°C to highlight its unique style and aromas. You can enjoy this wine right away or keep it in the cellar for further ageing." - Denis Bunner, Winemaker.
