Vaudésir is one of the seven official plots of the Chablis Grand Cru appellation. The vineyard faces both south and north, in an amphitheatre effect, overlooking the town of Chablis below. Wines from this plot tend to be softer and more elegant than other Grand Crus, with floral characters rounding out Chablis' iconic minerality. Benoit Droin and his father Jean-Paul take these exemplary grapes and use indigenous yeasts to ferment them, partly in stainless steel vats which retain the pure varietal character, and partly in old oak barrels to add texture and finesse. The result is an impressively complex and age-worthy Burgundy.
