Cyril Payon is not only a meticulous winemaker, but also boasts the impressive title of being President of France's oenologists. Working in the cellars of the award-winning co-operative Cave de l'Ormarine, he carefully selects grapes to capture different flavour profiles.

"Here we drink it with our local oysters and mussels for which the Bassin de Thau is famous. But you can enjoy this wine on its own, with nibbles, or with whatever you fancy; it is even more appetising if it's chilled of course. When I'm in Scotland, I love it with your smoked salmon with cracked black pepper and a sprinkle of poppy seeds!" - Cyril Payon, Winemaker.
