Explaining the production method of this wine style sounds like an April Fool's joke, but it's all true. Individual grapes picked out of a Riesling bunch whose water has been sucked out by Botrytis (AKA 'noble rot') guarantees a higher concentration of sugars and acids to water. Obviously! It’s not just that though, it intensifies the flavour nuances too, so while you get super-sweet Riesling balanced perfectly by firm acidity, you get incredible depth and length to the flavour.
