The Wine

Country of origin:

France

Region:

Champagne

When it comes to Champagne, many people stick to the familiar and pay for the privilege. But - if you're one of the canny ones who let their taste buds be their guide rather than fancy advertising, you'll love this! Made by a small family-run Champagne house under the stewardship of Laurent Champs, this bubbly has won a ton of accolades, but isn't yet well known enough to become a wallet buster. A superbly balanced fizz with plenty of concentration, fine mousse and crisp, well structured acidity.

Champagne Vilmart is a 'boutique' House. Our production is very small and organic and that's the way we like it because I can control every aspect of the winemaking, from the selecting of the grapes we use to the type and length of ageing I employ. Unusually we use new oak in ageing our wines, which gives an added dimension, character and potential for development, a decision that has won us praise from the likes of the 'Tom Stevenson' ('Christies Champagne & Sparkling Wine Guide' author).

"A ripe and fine complex nose showing very interesting flavours for a non vintage wine. There is a fine balance between the primary aromas (fruits), secondary (biscuit, bread, butter) and tertiary (minerals and spices). A real bouquet! Pale gold, mostly composed of Pinot Noir, reflecting a perfect maturity. The effervescence is long-lasting, giving birth to a persistent and delicate mousse with fine bubbles." Laurent Champs, Winemaker.
