The West Winds Gin - The Cutlass - is a super-premium gin from Australia's Margaret River that is ideally suited to making very fine cocktails. West Winds was started in 2010, setting out to make world-class gins that incorporate native Aussie botanicals into their recipe. Here they use locally sourced cinnamon myrtle and the Australian bush tomato! The key to its balance and lift, though, is that they really ramp up the amount of coriander, producing a headstrong yet beautifully aromatic gin.
