The Old Tom style was once hugely popular in 18th-century in England, as it is slightly sweeter than a London Dry but drier than a Dutch Genever. However in recent years it had almost become forgotten, so young distiller Rory Smith was keen to create his very own Old Tom Gin. He uses Norfolk honey and ripe mango during the distillation process to give this gin a lovely sweet finish. These rich flavours mingle with notes of warming pink pepper, and fresh grapefruit peel lends the gin a subtle dryness.
