- The base wines used to create the finest Cognacs are quite frankly undrinkable - hugely acidic with very little character!
- However, they are ideally suited to distillation, and Cognac is double distilled in traditional copper pot stills.
- Through this skilful process, extended ageing in barrel and eventual blending, one of the world's finest spirits is created.

This is a cracking Very Special (VS) classed Cognac made with the signature grape of Cognac, Ugni Blanc, and aged exclusively in Limousin oak casks. To be legally allowed to class your Cognac as VS, it must be aged in cask for a minimum of two years, yet this expression contains small proportions of Cognacs that are much, much older, adding depth and complexity to the house style. It is fruity and floral with a lightness to the palate that makes it ideal for sipping neat or can be used in a whole host of cocktails.
