Veneto is home to a number of Italy's classic wine regions but it is the sparkling wines from Prosecco that currently have a buzz surrounding them. The best sparkling wines have both delicacy and intensity, something we nailed on a recent trip out to see top Prosecco winemaker Umberto Menini. A lovely style of fizz packed with apple and pear fruit and a little leafiness adding to its charm. Ruby Port offers great value when you're in the market for something fortified. As it's the youngest to be released of the port family, it's the most fruit-forward in style. Because of its youth it can often be harsh but this is a style we swerved when putting together our exclusive Heranca Ruby. Bright and inviting red and black fruit with floral notes continue onto the palate with a long, luscious and silky finish.

The Pizo series is all about varietal character. The location of the vineyard, its altitude and the soil type all play an important role in allowing the fruit here to express everything it can and should. The long days of Spanish summer sunshine mean the fruit can gradually but thoroughly ripen. The altitude keeps the temperature in check so there's no chance of over-ripeness. And then there's the slate-rich soils which give the wine a clear and defined structure with a mineral texture to the palate.

Our search for a great value Sangiovese naturally took us straight to central Italy, but less predictable was unearthing a stunning small parcel of Merlot Ripasso that we couldn't turn down. After a few hours at the blending table, we discovered it was the perfect partner to the crisp and bright Sangiovese on show, too. Only 10% in the blend of this rich Merlot was enough to give the Sangiovese more depth and structure and, most importantly, really enticing fruit sweetness and a lovely, rounded mouthfeel. It remains true to typical Sangiovese varietal character, but with an even more moreish nature.

Winemaking in Portugal can be dated back to around the 5th century BC, but these days you might be forgiven for thinking that it is better known for Port rather than still table wines. However with a diverse climate and a new focus on modern winemaking techniques we're starting to see a lot more exciting wines like Casal Sobreiro Tinto hit our shores. This is a clever fellow and it will turn you on to modern Portuguese reds in a moment!

Chile is a land of ice and fire. The four seasons are very marked, with cold and rainy winters - and dry, prolonged summers without rain. Luckily, in spite of these blazing summers which help to ripen the grapes, the vines remain watered by the cool snow melt flowing down from the mountains. This makes for beautiful wines like this Merlot, which has a deliciously fresh character due to the coastal vineyards where the fruit comes from.

The winemaking is first-class and, being family owned and run, they are dedicated to achieving the very best quality. Chardonnay thrives when treated with a light touch and this unoaked expression is all about freshness over richness. Harvested from vineyards that have a coastal influence and then fermented cool to preserve purity, Astro Costera Chardonnay is clean, linear, and finely textured, with notes of lemon zest, juicy peach and gentle tropical fruit. A far cry from the overblown style, this is vibrant, elegant and a brilliant match for grilled seabass or roast chicken with lemon and herbs.

After the roaring success of the 16 Little Black Pigs Pinot Grigio, we thought we'd create a slightly upscale version of it with the help of Mr. Steve Grimley, our man Down Under. Like its junior peer, this wine is full of easy, lemon-infused scents and an exuberant, crisp vitality, citrus fruit at its heart, crunchy acidity and a long, lively finish - but all with added intensity. We don't want to complicate a good formula, so we haven't.

Wine may be considered art by many, but it's the science behind each particular vineyard that shapes the character of the finished wine: location; climate, soil plus that little enigmatic something that the French call "terroir". This Sauvignon Blanc hails from a fine single site in a unique desert-influenced location, where searing sun coaxes the grapes to perfect ripeness, whilst cooling breezes provide welcome coolness, imbuing the fruit with great depth of flavour. It shows tight and bright tropical fruit but remains restrained and controlled with a lovely refreshing edge to it. A singular expression of a unique and special place.
