Torabhaig Distillery: Where the ‘Skye’ is the Limit

Single Malt Scotch Whisky distilleries are a rare find on the Isle of Skye, with the Torabhaig distillery being just the second ever licenced on the isle and the first to be built on Skye in 190 years. So, when we saw these guys were releasing another whisky, it’s fair to say we got pretty damn excited.

Founded by Mossburn Distilleries, the team identified the old farmstead at Torabhaig as the perfect location for a small traditional distillery some time ago now, with restoration work beginning in 2013. After four years of hard work, the distillery was ready to go, producing its first distillation in 2017.

The team’s first ever distillation is being released in four phases, known as the Legacy Series, with the second release available now. Their inaugural whisky was a huge hit with whisky fans across the world, igniting a huge level of excitement and anticipation for the later additions to the range.

It’s certainly seems that Torabhaig is on a journey of discovery at the moment, with each new launch offering something a little different – although, that signature, heavily peated style it’s known for still shines through.

When it comes to producing single malt, Scotch whisky, the surrounding area really does influence the product. The water, the land and the climate all play a pivotal role in shaping the character and flavour that the whisky takes on. In fact, the climate and surrounding area are of such importance that a distillery really can’t just be plonked anywhere.

With this in mind, it quickly became clear that the old farmstead at Torabhaig on the Isle of Skye would be an ideal spot for a whisky distillery, with the perfect cocktail of natural elements to produce world-class whisky. Located in close proximity to the burns, Allt Breacach and the Allt Gleann, these feed the distillery with the purest island spring water possible, whilst the cold and volatile weather in this part of the world creates the perfect maturation conditions for the whisky making the spirit a true expression of this stunning little isle.

Whilst all of these factors play a crucial role, of course, the human element impacts the whisky, too. The team at Torabhaig Distillery respect the long standing tradition of Scottish whisky production, while also adding their own contemporary approach through their choice to ferment in traditional wooden washbacks. This adds extra complexity and flavour to the finished whisky.

We have been lucky enough to get our hands on a very limited supply of their second, and most recent, release in the Legacy Series, and trust me, this is seriously good stuff. The team are still on a journey of exploration meaning with each release there is always something new to discover.

Over recent years the team have been on a mission to find the true expression of Torabhaig and, as a result, have evolved a signature style that they describe as “well-tempered peat”. This is an indulgent style that certainly comes through in this whisky.

This second expression has been bottled at 46% ABV in small batches drawn from no more than 30 casks each, creating a rich and intense spirit. With youth on its side, you can expect gentle citrus flavours, with hints of dried tropical fruits. Layers of smoke and spice are found on the finish, which come from the peat, adding another layer of complexity and reinforcing that signature style the team have crafted.

Perfect over ice or with just a splash of cold mineral water, this spirit is a real treat. As soon as you get your hands on it we have no doubt you will want to crack it open and give it try. However, if you are somewhat a collector of fine whiskies then this is only going to improve with age, so you may choose to savour it in years to come.

With two more releases planned for their Legacy Series, as well many more distillations to follow, the sky really is the limit for Torabhaig Distillery and, it’s fair to say, we cannot wait to see what comes next.
