Corvina
Corvina is a grape which has drifted in and out of popularity over the years. It is still relatively underappreciated, however due to winemakers experimenting with barrel ageing and longer maceration production methods, quality and popularity are on the up. This is an Italian black grape that’s commonly used in blends, although single varietals are just as good and particularly distinct in flavour. If Italian red vinos are your thing, this is one to try!

As a single varietal, Corvina has a distinct flavour profile. Notes of sour cherry are balanced by sweet red fruit flavours such as strawberry and plum. Herbaceous flavours are also common and essential to the character of the wine. The thick skins of these grapes make them perfect for drying and therefore can commonly be used in Amarone wines where flavours are richer and more concentrated. Corvina is also commonly blended with Rondinella and Molinara to produce Valpolicella and Bardolino creating less herbaceous and slightly juicer wines.

Light Full-BodiedCorvina is a light-bodied red, with high levels of acidity. Despite the thick skins of this grape, it is low in tannins making it a wine that’s easy to drink. For most of its history, this grape was drunk young and fresh, however nowadays ageing is used to soften the wine and decrease the acidity making the wine less herbaceous. The grape is known for its high yields which can sometimes compromise the quality of the wine. However, this is why the grapes are often dried for use in Amarone wine. The drying helps to concentrate the flavours and add body.

Corvina is almost exclusively found in the Veneto region of Northeast Italy, close to the shores of Lake Garda, as well as in Valpolicella. The environment here suits the grape as it benefits from a warm climate, but is cooled by the altitude, promoting a long growing season. Elsewhere in the world, you can expect to find Corvina in very small quantities. Australia is one place which has begun to test the waters with this variety, particularly in the New South Wales area, where the altitude creates a climate similar to that of Northern Italy.
What Food Goes with Corvina?
When drunk as a single varietal, lighter fare is the best option. Grilled salmon would be a nice choice here, or slightly spicy foods as the freshness and acidity would help to cut through the heat. If you are drinking a blend such as Valpolicella, mid-weight cuisine would be a better choice. Think game birds or stews with earthy flavours such as mushroom. However, avoid anything too rich in flavour as this could overpower the fruitiness of the wine.
