The wine from the beautiful island of Santorini are some of the freshest Greece has to offer. The Assyrtiko grape variety is also one of the more pronounceable and has a growing following, albeit pretty niche. The growing conditions on this island are challenging to say the least, mainly due to a serious lack of rainfall. But as in many of the world's drier viticultural places, nature and the ingenuity of humans has made it possible to cultivate grapes and make seriously impressive wines. The combination of volcanic soils, nightly sea fogs that feed the thirsty vines and a vineyard that looks like a collection of giant bird nests - of course the wines can be stunning! Dense fruit, some raisin notes, serious and multi-layered, this will benefit from some hearty food, but is most definitely a great bottle of wine.
