Winemaker extraordinaire Nico Vermeulen - a keen cook, (especially when it comes to things he's shot himself) is an expert on pepper of all things. As a winemaker, he has long been intrigued by the "white pepper" and "black pepper" characteristics that Shiraz, grown in different parts of the country, can yield. So he sought to bring the two together. This is a wine of two parts: the Malmesbury portion gives the black pepper, the Durbanville portion the white. Ying and Yang, in perfect harmony.

This wine is an ambitious Shiraz from Lodi, the self-styled 'Zinfandel Capital of the World'. So it's a boon to find such a succulent Shiraz cutting Zinfandel's lunch, on hallowed turf. This parcel was made by the team at one of the most prestigious operators in these parts - it's a condition of the deal that we can't tell you which! Suffice it to say that if you had to pay the full ticket for the estate label, it would be twice the price.

There are no clues as to what this wine is about on the label, in fact there are very few words at all. But it is often the quiet ones who have the most to say! The immense flavour profile on this beauty comes from a combo of perfect varietals, planted on wicked, ancient soils (schiste). A blend of old bush-vine Grenache, Syrah and Carignan from the remote hills of Cabrières, made by an old guy with a lifetime of experience. Nothing is rushed. It is all handled so beautifully.

An elegant, top quality Soave from a small, family owned winery. Owned by seven brothers and cousins who brought the property 6 years ago simply to ensure that they were in control of each stage of the wine production. It's a delicious blend of Garganega and Trebbiano di Soave - the latter is meticulously air-dried to give a much greater depth of flavour to the finished wine, as well as texture to the palate.

Winemaker, Luke, is a big Old World fan. And it shows in his steadfast will to reflect the refinement and elegance of the traditional European styles in his wines. He has taken the ne'er-perfected-in-Oz Bordeaux blend of Semillon and Sauvignon and used the very gentlest of handling to create a wine with a lovely textured feel and all of the exuberance of good, ole Antipodean sunshine. This is a wine of vitality to enjoy on its own, with friends.

Chardonnay has been persona non grata for years now but we think it's a little premature to sound the death knell on its reign. It should be remembered that some of the best whites in the world, from Puligny in Burgundy, to Pierro and Leeuwin in Oz, are Chardonnay, and that placed correctly, it dazzles like no other. On the Western Australian state you'll find the finest examples, without a doubt. This rich, rounded cracker comes with an array of scintillating flavours and a fresh acidity.
