We Say...

The long, slow ripening of the grapes allows them to develop enticing Cherry and plum flavours whilst, crucially, still retaining enough freshening acidity to produce a beautiful, balanced wine. True to his roots, Eric matured a portion of the wine in French oak barrels which adds a roundness and a hint of spice to the finished wine. The perfect accompaniment to a Roast Chicken!
