Fernando Castilla is right up there with the best sherry bodegas. Transformed by sherry-nut Jan Pettersen, some 13 years ago, it is now truly singing. This amazingly complex, sticky, intensely-scented raisin and prune PX is a MUST try. Plenty of freshness too, which only the best bodegas can deliver.
