Domaine du Cedre was a slightly smaller but much more rosy and shiny apple than the good wine it replaces as our number one Chablis for everyday drinking. It has bright and classic flavours that pack loads of refreshment into the bottle and make devastatingly good bedfellows to any fish dish you have planned.

These guys are on the shining path, having being totally enlightened by Alvaro Espinosa in all things organic and sustainable. Walking round these vineyards is like visiting a zoological park, it is so teeming with wildlife! The wines, like the environment are about equilibrium.

Thanks to those ever-helpful French wine laws, the makers of this wine can't call it Chablis, because it's technically not from there. But in the words of an ill-fated star-crossed lover "a rose by any other name would smell as sweet" and that's what we reckon's true of this little Burgundian number. So if you want something classy and affordable to go with your grilled chicken, here for art thou Juliet.

An old winner back after a spell out, a customer favourite with all of the class of 1er Cru Chablis, then a little more. One for the dinner party table as well as a good wine for fish. Has oily, weighty richness and a nice bit of bottle age to boot.

It looks good (for dinner parties), it goes brilliantly with food of any description (ditto), great Burgundy snob appeal, and thankfully also tastes pretty darn good too. The most useful wine in your cellar. Clean, crisp and bone dry. A classic.

Tangy and full flavoured, this white Burgundy, from Silver Medal winning Vallet Freres, is pure opulence. Made from low-yielding vines (just 7 bunches of grapes per vine!) all the vitality of the vine is concentrated in this wine. The grapes are harvested by hand. Even the bottling relies solely on gravity rather than mechanical pumps. Triple Michelin star chef Gordon Ramsey is such a fan of the winery, no less than 5 Vallet wines have appeared on his restaurant's wine list.

It's a family love-affair with this grape at Catena, the producers of this. It's probably the best Chardonnay in Argentina today. It's got the lot: freshness delivered by fruit picked from the slopes of the towering volcano Tupungato, mingling with riper, more tropical flavours from the valley floor at Tunuyán and Agrelo. Nicolás and daughter, Laura Catena have spent many vintages in pursuit of a very natural wine and they haven't missed a beat with this one.

If you want the real deal, there's no point buying the cheap supermarket chablis. Frankly, you're better off with a good, basic Bourgogne Blanc. Instead, buy from a great area and a great producer - money well spent. This classic Chablis has all the minerality and wonderfully intense flavours that you would expect from a Premier Cru. Described by Chablis authority Andrew Jefford as "a domaine to follow", this wine, from the 6th generation of the Moreau 'dynasty', is robust, rich and intensely fresh.
