We've watched this wine change and grow over the past few months; every tasting has been a surprise, and each surprise is more pleasant and revealing than the last! There is virtually no buttery character; rather, heady flavours of citrus fruit, marmalade and toffee'd pear come to the fore with crisp, Bramley apple acidity and touches of lemon and coconut.
The Western Cape is a veritable smorgasbord of climatic pockets, biodiversity and geology. Because of this it is vitally important that the right 'terroir' is found for each wine style. The Cape naturally lends itself to soil specific wines, an almost completely unexplored pursuit. But here's one!
