France's Provence region underwent a classification akin to the famous classification in 1855 of Bordeaux; it just took place 100 years later. Wine and food matching is a long standing tradition and you'll find it hard to beat the combination of local provincial dishes and the wines of the area. There's a touch of rose petal on the nose with a subtle strawberry intensity, but it is the colour of this wine that we find so enticing. A classic ratatouille or a coq au vin is an ideal partner.
