Chile is an odd mix: Old World European immigrant expertise and savoir faire that stretches back over 100 years, plus thrusting, adventurous New World inventiveness and innovation. When it's done right, normally by someone who really cares, (in this case the redoubtable Cesar Morales) the magic happens. A perfect synthesis of climate, soil and desire. Plus, a match made in heaven for beef dishes, or experiment a bit and try it with spicy sausage pizza.
